Executive Chef Carlos Buscaglia has created a more casual menu featuring his take on regional Italian specialties. Fiamma's Raviolini filled with Braised Short Ribs and finished with Barbera Wine Glaze and Piave Cheese and homemade Gnocchi with Maine Lobster, Cremini Mushrooms, Black Truffle and Leek are both heavenly. Main courses include a Veal Sirloin Chop with Roasted Mushrooms, Red Onions and Sugo di Naturale and the Olive Oil Roasted Halibut served with Borlotti Beans, Smoked Prosciutto and finished in a Black Olive Vinaigrette.
Executive Pastry Chef Elizabeth Katz, whose creative variations of traditional Italian desserts have been hailed by critics as a "gorgeous and sensual finale", is sweetening up the sizzle in Vegas with her elegant dolci - like Crocchette, her irresistibly crispy Amaretti and Ricotta Beignets with a variety of scrumptious dipping sauces, and her crispy caramelized Peach Crostata served with Homemade Peach-Vanilla Gelato.
Our Beverage Department's selections of wines-by-the-glass and the versatile and impressive array of more than 400 selections of Italian and California wines beautifully compliment Fiamma Trattoria's multi-regional menu and would make Bacchus proud! Eben Klemm, our Master Mixologist has created one of Vegas' most exciting bar scenes with his imaginative and witty libations, like Twice Tempted and Innocents Abroad.
You'll find Fiamma Trattoria within MGM Grand's bustling Studio Walk. The restaurant is 7,000 square feet of dynamic contemporary design - check out our custom bamboo "Nest" lighting, Woven Towers and a very sensuous Wave Wall - including a cool 300-seat split level dining room, a cafe for "bites between bets" and a hot bar and lounge with a gorgeous fireplace. We even have our very own private screening room - a fabulous place for a private party.
